Banana-Poppy Seed Cake

Here’s one of my all-time favorite cakes for picnics, tailgate parties, and casual gatherings with family and friends. Guaranteed to disappear as quickly as you can cut it, this cake can be served right out of the pan. For on-the-go occasions, I use a pan that is easy to transport in a wicker basket, or sometimes I line a basket with a couple of colorful kitchen towels and set the cooled cake in its baking pan on top. For a great addition to a brunch buffet, I rely on a triedand- true ceramic baking dish. If desired, scatter about 1 cup (5 ounces/140 grams) blueberries over the top of the batter before baking. The plump, juicy berries partially disappear into the cake and are a delicious counterpoint to the sweetness of banana and delicate crunch of poppy seeds.YIELD: ONE 10-INCH ROUND CAKE, 8 TO 10 SERVINGS
